Balsamic Garlic Zucchini Chips
Zucchini is technically a fruit botanically, however considered a vegetable around the world. It can be eaten in raw or cooked form. It is rich in manganese and vitamin C and a good source of potassium, folate and vitamin A. Alone it doesn’t have a huge amount of flavour, however is very versatile and can be hidden into a variety of different dishes. I enjoy snacking on zucchini if seasoned nicely or I usually grate and hide into dishes such as bolognaise.
Instructions
  1. Preheat oven to 180 degrees fan-forced.
  2. Chop zucchini into 5mm thick circles and spread out on a baking tray lined with baking paper. Allow to sit for 1 hour to dry out.
  3. Then using a small bowl add zucchini, balsamic and garlic and mix to coat.
  4. Place zucchini back on the tray and bake in the oven for 1 hour until the edges become crispy. Serve and enjoy.

Make sure you add some protein to this to create a meal along with additional vegetables.
