Cauliflower Fried Rice
Love fried rice but trying to find a new way to enjoy it without feeling really full and sluggish afterwards? Cauliflower needs to become your best friend then. Its light fluffy texture makes it ideal to use as a rice substitute and will give you the added bonus of extra nutrition without losing the flavour.
Instructions
  1. Place cauliflower florets into a food processor and process until a rice consistency is formed. Place in a bowl and set aside.
  2. Place oil in pan along with onion and garlic and fry until onion has softened.
  3. Add capsicum, snow peas and beans and cook for approximately 5 minutes.
  4. Then add cauliflower rice and tamari and cook for a further 5 minutes, ensuring that you continue to mix.
  5. While this is cooking add eggs to another fry pan and cook, then chop into small pieces and mix through rice.
Recipe Notes

You will need to add your choice of protein to this meal to complete it such as; prawns, chicken or beef. Try mixing it up with the vegetables that you use. Grated carrots, zucchini and eggplant also go very nicely.
