Cauliflower Pizza Base
Such a quick, simple and easy recipe to make during the week or on the weekend. Best part is, it is actually healthy, full of protein and holds together really quite well!
Instructions
  1. Preheat oven to 180 degrees fan forced.
  2. Add cauliflower florets to a food processor and process until rice like consistency is achieved.
  3. Transfer into a nut milk bag or clean tea towel and squeeze out liquid – need to ensure as much liquid is removed as possible.
  4. Transfer into a bowl and add eggs, flour and herbs and mix.
  5. Let it sit for 5 minutes for coconut flour to absorb liquid.
  6. Press base out onto 2 lined baking trays. Mixture will be more crumbly then a normal pizza base as it is made on cauliflower but it will hold together relatively well.
  7. Bake in oven for approximately 20 minutes until the pizza bases start to get brown around the edges.
  8. Remove from oven, add toppings and bake for a further 10 minutes.

My Favourite Toppings: Pesto, roast pumpkin, mushrooms, tomatoes and goats cheese. Tomato paste, chicken, spinach, olives and feta.
