Cauliflower ‘Rice Pudding’
Cauliflower is such a versatile vegetable and its mild flavour makes it ideal to use in savoury and sweet dishes. This rice pudding does taste different to the traditional rice pudding, however is still very tasty and much healthier.

  1. Add cauliflower florets to a food process and process to make a rice consistency.
  2. Add cauliflower rice, coconut milk and vanilla powder to a saucepan on medium heat. Once simmering allow to cook for 15 minutes until cauliflower is soft.
  3. Add rice malt syrup and allow to simmer for a further few minutes.
  4. Remove from heat and stir through coconut cream.
  5. Serve immediately while hot or place in the fridge and serve cold. Top with your choice of toppings.
Recipe Notes
  • Add cinnamon or any other spice you like (e.g. ginger, nutmeg, allspice, mixed spice).
  • Try different milks (e.g. rice, cashew, almond).
  • Add cacao powder to give it a chocolate flavour.
  • Add a different sweetener (e.g. stevia, raw honey, maple syrup).
  • Add some dried fruit (e.g. goji berries, blueberries, raisins).
  • Add different toppings (e.g. shredded coconut, fresh fruit, chia seeds, raw nuts/seeds).
  • Add in nut butters to change the flavour.
