Herbed Coated Eggplant
Eggplant is one of my favourite vegetables as I love the texture and find that is absorbs different flavours very well. Eggplant is also high in fiber and antioxidants due to its purple skin. This recipe is very quick to prepare and the addition of coconut flour gives it a sweet yet savoury flavour.
Instructions
  1. Preheat oven to 180 degrees fan forced. Line a baking tray with baking paper.
  2. Separate yolks from whites and place in a bowl. Slightly whisk egg whites.
  3. Add coconut flour, mixed herbs, salt and pepper to a shallow dish and mix.
  4. Chop eggplant into slices approximately 5-7mm thick.
  5. Dip each piece of eggplant into the egg white followed by the coconut flour coating and place on baking tray. Continue to do this to each piece.
  6. Place in the oven for 40 minutes until golden in colour and eggplant is cooked.
