Recreation of ‘Baked Beans’
No everyone tolerates beans very well, and often the canned baked beans are full of sugar and salt. So why not make your own! I have used green peas instead of beans. Green peas are much more nutritious and full of vitamin K, fiber and antioxidants and are very affordable. This makes a great side dish with lunch or dinner.

  1. Start by chopping onion and bacon.
  2. Add oil to a medium sized saucepan on medium heat, add onion, bacon and garlic and sauté until onion softens and bacon is nearly cooked through.
  3. Add tomato paste, herbs, salt and pepper and mix until combined.
  4. Drain peas and add to saucepan. Stir through to heat.
  5. Serve and enjoy.
Recipe Notes
  • Alternatively you could swap green peas for your preferred beans (i.e. borlotti, cannellini or butter beans), or even chickpeas.
